Valentine's Day Giveaway... Sweet!

I LOVE to cook but lately I've been bored with food. I browse the Food Network channel and online and have used many of their recipes quite successfully but lately everything I prepare seems like I've been eating forever! I have a crock pot, lots of cool gadgets, can cook just about anything and I love all kinds of foods from American, Italian, French, Asian, Spanish, Mediterranean and of course Russian. I love culture and am willing to try anything at least once.

  4. I like easy recipes with few ingredients. One of my favorites is Spaghetti with Oil and Garlic, sprinkled with Parmesan Cheese.

    I saute a some minced garlic in about 1/4 cup of Extra Olive Oil. I then toss it into cooked Spaghetti and sprinkle Parmesan Cheese on top. It is my favorite food to eat.

  12. This has of recent become one of my favorite recipes:

    Pasta and Ricotta

    In a large serving bowl mix a good amount of Ricotta Cheese (The same amount you would use if you were using tomato sauce for your pasta) with salt to taste, pepper to taste, nutmeg to taste, zest of an orange (or any other citrus fruit) two tablespoons of olive oil and some grated cheese. Let it stand. In fact you can mix this way before you make the pasta so the cheese warms up.

    Cook the pasta. I like mine al dente. Drain out all the water, pour the pasta into the Ricotta mixture and mix. You can sprinkle the top with additional parmesan cheese if you wish.

    This dish is truly yummy. (I have also used this ricotta finning to make an omelet.)

  14. One of my favorite easy meals is semi homemade sweet sour chicken. I use the La Choy sweet sour chicken (packaged as 2 cans stacked on top of each other). I add 2 cut up chicken breasts, carrots, broccoli, peppers and/or whatever other veggies I have in the fridge and toss it together in the slow cooker. It cooks all day and the chicken gets an excellent flavor. All I have to do is make the rice right before we're ready to eat. :)

  18. chicken tortilla bake

    cooking spray
    1 medium bell pepper, chopped
    1/2 C. chopped yellow onion
    1/2 C. reduced-sodium chicken broth
    1 can (10 3/4 oz) condensed reduced-fat cream of mushroom soup
    1 can (10 oz) Ro-tel, undrained
    2 C. shredded cooked chicken
    9 corn tortillas, torn into bite-sized pieces
    1 C. shredded reduced-fat Colby Jack cheese

    Preheat oven to 325. Spray 8x8 baking dish and medium skillet with cooking spray. Heat skillet over medium-high heat. When hot, add bell pepper and onion; cook 5 minutes or until tender, stirring several times. Stir in broth, soup, undrained tomatoes and chicken; blend well. Bring to a boil; remove from heat. Layer 1/3 each of the tortilla pieces, chicken mixture and cheese evenly in baking dish. Repeat layers twice more. Bake uncovered 40 minutes or until hot and bubbly. Serves: 6

  20. Easy Chicken Quesadillas! :)
    1 pkg. (10) flour tortillas
    1 package of Velveeta Cheese
    1 can diced green chile peppers
    3-4 boneless chicken breasts
    Butter

    Put Velveeta Cheese in pan. Drain chiles. Pan fry, in a little butter and the cheese, the chicken until done. Cool and cut the chicken into very small pieces, almost shredded.

    Put chicken, cheese, and chiles on tortilla. Flip tortilla in half to have a half circle shape. Cook on both sides in separate pan like a grilled cheese. Makes 10 quesadillas. Cut . Serve hot with salsa and/or guacamole and sour cream.


    The mixture of chicken with the velveeta cheese is amazing! :)

  21. Gianna's Fruit Filled Crispy Rice Bars

    3 tablespoons of butter
    10 oz marshmallows
    6 cups of your favorite crispy rice cereal
    1/2 cup of dried cranberries
    1/2 cup of dried apple bits

    In a large saucepan melt butter. Add marshmallows stirring constantly until melted. Add crispy rice cereal stiring until well mixed. Add cranberries and apples.
    Quickly shape onto board into a large square about 1 inch high. Let sit for 5 minutes and cut into 24 squares. Store in tupperware container, that is if there are any left!

    Depending on my mood I like to use dried blueberries or cherries with the dried apples. A few times i've mixed dried blueberries, cherries and cranberries (1/2 cup total) with the dried apples. Almonds are a great addition as well (about 1/4 cup sliced almonds) on occasion. Be creative!

  22. Shrimp Lo Mein



    * 1/2 tablespoons soy sauce
    * 16 oz large shrimp, peeled, deveined
    * 16 ounces spaghetti noodles, cooked
    * 1 1/2 tablespoons dark toasted sesame oil, divided
    * 3 cups thinly vertically sliced onion
    * 5 cups broccoli florets (about 1 pound)
    * 8 oz sliced fresh mushrooms
    * 1 tablespoon minced fresh garlic
    * 1 tablespoon minced peeled fresh ginger
    * 3/4 cup fat-free, less-sodium chicken broth
    * 1/4 teaspoon salt
    * Sesame seeds to taste (optional)

    Combine the soy sauce and shrimp; cover and refrigerate 30 minutes. Drain through a sieve over a bowl, reserving soy sauce. Prepare noodles according to package directions, omitting the salt and fat. Drain and rinse; drain well. Toss noodles with 1 teaspoon sesame oil. Set aside. Heat 2 teaspoons sesame oil in a large nonstick skillet over medium-high heat. Add onion; stir-fry 3 minutes. Add broccoli and mushrooms; stir-fry 3 minutes. Add garlic and ginger; cook 1 minute, stirring constantly. Remove vegetable mixture from pan.Heat 1 1/2 teaspoons sesame oil in pan. Add shrimp, and stir-fry 1 minute. Add the reserved soy sauce, broth, and salt, and bring to a boil. Add noodles, vegetable mixture, and sesame seeds, and toss well to combine.

  25. One of my favorite quick recipes has three ingredients: Spaghetti, pesto and marinaded artichoke hearts! Toss cooked spaghetti with pesto, mound in plate/bowl and top with the artichoke hearts... quick and delicious, and a serving of vegetables included!
